Coolant Temp problems

Recently I had my thermostat replaced because the check engine light came on. Now my temp gauge stays below the C. The temp showed 80-84 for hours while driving 70 mph. Anyone have any idea what needs to be replaced now.

Temperature sensor, low cost, located in thermostat housing.
