Upgrading load capacity with 5 new rims

I apologize in advance if this has already been covered, but I'm new at this.

I have a bone stock 2015 2 wheel drive Ram Eco Diesel with just over 60K miles. Although my stock tires have performed fine, it's about time to get new tires. I am getting a camper, so I need to upgrade the tires from a street B load range to a LT tire with load range F or G. I also want to get rid of the temporary spare, so I have 5 usable tires. Finally, I'd prefer to downsize the rims from 20" to 17 or 18". Although I anticipate being 99% on road, I do want some minimum off road capability.

Any suggestions?
