Does the engine burn a trickle of DEF all the time, or just when the engine exhaust temperature is particularly high, e.g. when under load from acceleration, high speed or headwinds, towing or climbing hills?

What are the advantages of diluting the DEF with distilled water? It can’t be just to save money... up here in Canada the cost saving of running 100% distilled water vs pure DEF is only about US$1.50 per 1000 miles.
