I will be leaving in a trip in a couple days towing my camper (5000 lbs.)
I have a 2015 Bighorn with 3.92 axle. completely stock truck, no tunes etc.
Aside from fuel mileage does anyone have any information or data they would like to have?
I will do my best to accommodate!

Maybe comment on Transmission/coolant Temps while towing. Also, did you use tow-haul mode and if so, how did it help and did it make any difference in the mpgs. What final gear did you drive in, 7th or 8th? These are all things I'll look closely on my on my first long tow.

So my wife and I had a great trip. We travelled down the windy Oregon Coast and then over to Eastern OR. Several passes over the Cascade mountains and then in the high desert 2 lane roads and 6% grades.I am happy to say the RAM did great.
Here are a few #s for you all
We travelled about 1200 miles or so
16.5 mpg for all towing miles
coolant temp between 212 and 222
trans temp195 to 203
Oil temp 220 to 239
Oil pressure 30psi to 60psi

Average outside teams ranged from 50 F to 80 F
I used tow/haul mode always
Trailer weight 5000 lbs.(max tow capacity on my truck is about 9000) Reese pro series load equalizing hitch
I used cruise control on the freeway (set at 65mph)and the truck cruised in 8th gear 2000 rpm (while in tow mode) and downshifted into 7th on easy grades.
Over the passes it ran between 6th and 7th gear 2500rpm or so.
Our average speed for all the towing miles was 52 mph.

Love to hear your thoughts on any of my numbers!

Oh yeah, I added an Undercover Classic Tonneau cover. Love it

Except for tranny temperatures, the rest of the numbers are right on with mine. Towing my toy hauler I only get 14 mpg. My transmission temperatures sit around 215-220*F towing along and often climb into the 230* F range with 250* briefly on steep mountain hills.

You did well.
