what is the best way to change coolant fluid?

changing my 2015 ecodiesel coolant fluid and thermostat now with 160,000 miles previously changed at 15,000 by dealer due to oil leak into coolant. What is the best way to get the fluid out? My petcock valve did not work when turning it; apparently plugged or malfunctioning; fluid is still pinkish red. So i took off the bottom hose off the radiator and of course got a floor bath. Installed it back and installed the thermostat and put in 5 quarts of antifreeze and the reservoir is full and will not take any more fluid ("water" which is started to add next). Any ideas? How do i ensure that there is sufficient fluid in the engine since i lost the fluid on the truck body/ground and some in the catch container and can't measure the volume taken out?
Was/is there a better way to drain the engine block and then refill it?
