I understand the concept of average temperature.  You also seem to be missing my point.  
I am curious to see if this is or *is not* something to worry about - e.g. should we check the manufacture date on the bottles we purchase. Is a bottle that is three years old safe to purchase and use? My *point* here is that the chart is probably very, very conservative and that DEF expiration isn't something we need to worry about EVER, and, I'm willing test that theory myself.
